solipsistnationSo I sorted out the hum. It was easy.
There are 4 tubes in this amp. I swapped one pair and the hum stayed in the left channel. I swapped the other pair and the hum moved to the right channel. Then I swapped that tube with one of the first tubes, figuring it was worth a try, and lo and behold, the hum went away. It's probably just hiding somewhere else in there, but I can't hear it any more so that's good enough for me.
It sounds pretty good.
