Today, it being more than 30 days since I put it down to age, I opened the first of the cheddars.

It's interesting-- it's not _quite_ a cheddar like you know it, but it's very close, and I think I know what went wrong. it's still a bit curdy in the middle-- I think it didn't dry enough. Otherwise, it's very tasty. The outer edges are cheddary, while the middle bit is creamy. It's absolutely not a failure. In fact, it's a decent dinner.
